I am really enjoying expanding my menu horizons with all these veggies!
I made a variation on the zucchini boats recipe you linked to a couple of weeks ago. It was very good and very easy. First I cut the zucchini lengthwise, salted them and letting them sit for about five minutes (takes out any bitter). Then, I dried the zucchini, scooped out a shallow trench down the middle (lengthwise), loaded it up with some leftover sauteed greens, and topped it off with a little cheese. 20 minutes in the oven (350), and it was done. Nice & easy!
I think you can use the principal of stuffing veggies with just about any leftovers you have.
Awesome! Thanks for sharing Rhonda! Stuffing squash is very versatile and there are numerous ways you could stuff it. The patty pan and 8 ball squashes are perfect for stuffing too!
