Aqua Fresca – A Refreshing Summer Drink

August 1st, 2011

All kinds of melons are deliciously in-season right now.  Here’s an easy, refreshing summer drink you can make…

Watermelon Aqua Fresca

* You could make this with cantaloupe instead, or a mix of melons

Makes one large pitcher

1/2 large watermelon, rind removed and fruit cut into large chunks, a little over 8 cups (the fruit without the rind weighed about 3 pounds)

4 cups water

8 fresh mint leaves (optional)

Juice of half a lime, about 1 1/2 Tablespoons (don’t skip this; it really perks up the flavor.)

3 Tablespoons raw honey, if you need it

Place half the fruit and half the water in a blender and puree until smooth.  Taste for sweetness.  If you think you will need to add honey, add it in the next batch.  Strain the liquid through a fine mesh sieve into a pitcher or a large bowl.  Repeat with the remaining fruit and water, adding the mint leaves if you are using them and honey.  Blend until smooth.  Strain.  Stir in lime juice.  Chill until ready to serve.

Made this today for some friends – threw some strawberries in there with it! Delicious stuff and ridiculously easy.
