A Classy Way to Eat Radishes

March 31st, 2011

This Saturday’s produce share will include beautiful red and pink radishes from our farmers in Cleburne, TX!  Here’s a classy and incredibly tasty way to enjoy those fresh radishes…(warning, you might become addicted to this sandwich!)

Did you know that a radish, butter, and bread sandwich has been a favorite appetizer on European menus for decades?  The Europeans know what they’re talkin’ about when it comes to food!  Only four ingredients – bread, butter, salt, and radishes – become a gourmet delight when they are eaten together.  Add a glass of wine for yourself and your guests, and it’s perfect!

Radishes, Butter and Bread

Serves 8-10

1 bunch (approximately 2 dozen) small, firm, fresh radishes
8 slices fresh bread, cut into quarters
1/2 cup unsalted butter, room temperature
Sea salt

Wash (don’t peel) radishes and trim off the little “tail” and stems; set a dozen or so tender, fresh leaves aside.

Slice radishes thinly.  Chop or sliver radish leaves.

Spread one side of each piece of bread generously with butter. Top with some chopped radish leaves and then cover with the slices of radishes.

Serve, offering the salt at the last minute before eating (let each guest sprinkle their own salt on top of the radish slices).

Optional: Serve with a white wine such as pinot gris or chardonnay.
