Squash and Apple Bake

Check out this scrumptious dessert – perfect for the organic Buttercup Squash (see photo below) and Apples you’ll be getting in the bins this weekend!

Squash and Apple Bake

  • 2 lbs Butternut or Buttercup Squash
  • 1/2 cup brown sugar, packed (or substitute maple syrup or honey)
  • 1/4 cup melted butter
  • 1 tbsp flour
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 2 baking apples, cored and cut into 1/2 inch slices

Heat your oven to 350 degrees. Cut the squash in half and remove any seeds and fibers then cut the squash into 1/2 inch slices. Mix the remaining ingredients (except for apple slices) in with the squash. Arrange in ungreased baking dish and then top with apple slices.

Cover with foil and bake for 50-60 minutes or until the squash is tender. (Note: Buttercup Squash bakes in less time than the Butternut. Also, the thickness of the squash slices can lengthen or shorten the baking time.)
